Celebrate with a Champagne Crusta

A different way to sip champagne over Christmas Lunch from Nic, at Cosi Bar Ristorante


Champagne Crusta
20 ml freshly squeezed orange juice
10 ml elderflower liquor 
5 ml orgeat syrup
10 ml brandy
Dash of bitters
Caster sugar to serve
Top with champagne 
Thin slice of orange rind


Method 
1: Mix orange juice, elderflower liquor, syrup, brandy and bitters in mixing glass and ice with bar spoon until chilled
2: Rim champagne with caster sugar, rub orange quarter on rim of glass and roll in sugar
3: To serve strain orange mixture in glass and top with chilled champagne, garnish with orange rind
